The Italian vegetable broth is a simple light broth suitable a risotto, such as Risotto alla Milanese, or other dishes.

Ingredients:
1 medium pot of cold water
2 peeled carrots
2 stalks celery
1 peeled medium-sized onion
salt, to taste
Put all ingredients into the pot of water. Bring to boil and simmer for an hour, until the vegetables impart their flavor. The broth can be used immediately or frozen in airtight containers for future use.
